Ingredients
For the filling:
- 2 ripe plantains, peeled and roasted

Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the roasted plantains, tropical fruits, cilantro, garlic, lime juice, salt, and pepper.
- For the yuca croquette, combine the grated yucas, cornstarch, coconut oil, and egg replacement in a separate mixing bowl. Mix until a dough forms.
- Shape the dough into small croquettes and place on a baking sheet lined with parchment paper.
- Bake the croquettes for 15-20 minutes or until crispy and golden brown.
