Ingredients
- 1 block (400 g) extra-firm tofu, pressed and cubed
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup chopped peanuts
Spicy Peanut Sauce
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon maple syrup
- 1 teaspoon chili garlic sauce (adjust to taste)
- 1/4 cup water
Instructions
- Toss tofu with cornstarch. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown and crispy. Set aside.
- Add remaining oil to the pan. Add onion and cook until softened.
- Add garlic, bell peppers, and broccoli. Stir-fry until vegetables are tender-crisp.
- In a small bowl, whisk together peanut sauce ingredients.
- Add tofu and sauce to the pan with vegetables. Stir-fry until heated through and sauce thickens slightly.
- Serve over rice or noodles, garnished with chopped peanuts.
