Sweet Potato Black Bean Burgers with Avocado Cilantro Cream

Ingredients

  • 1 can (15 ounces/425 g) black beans, rinsed and drained
  • 1 medium sweet potato (about 250 g), cooked and mashed
  • 1/2 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • Olive oil, for cooking

Avocado Cilantro Cream

  • 1 avocado
  • 1/4 cup cilantro leaves
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine mashed sweet potato, black beans, red onion, cilantro, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and breadcrumbs. Mix well.
  2. Form mixture into 4 patties.
  3. Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes per side, or until golden brown and heated through.
  4. Meanwhile, prepare avocado cilantro cream: In a blender or food processor, combine all ingredients and blend until smooth and creamy.
  5. Serve burgers on buns with avocado cilantro cream and your favorite toppings.
