Ingredients
- 8 rice paper wrappers
- 4 ounces (115g) rice vermicelli noodles, cooked according to package directions
- 1 block (400g) firm tofu, pressed and sliced
- 1 cucumber, julienned
- 1 carrot, julienned
- 1/2 cup bean sprouts
- Fresh mint leaves
- Fresh cilantro leaves
- Fresh basil leaves
Peanut Dipping Sauce
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon maple syrup
- 1 teaspoon chili garlic sauce (optional)
- 1/4 cup warm water
Instructions
- In a small bowl, whisk together peanut sauce ingredients until smooth.
- Fill a large bowl with warm water. Dip one rice paper wrapper in the water for a few seconds, until softened.
- Lay wrapper flat on a clean surface. Place a few noodles, tofu slices, cucumber, carrot, bean sprouts, and herbs in the center of the wrapper.
- Fold bottom edge of wrapper over filling, then fold in sides and roll up tightly.
- Repeat with remaining wrappers and filling.
- Serve summer rolls with peanut dipping sauce.
